When Dipak Sah moved from New York to Texas, he brought more than luggage with him—he carried a craving. A craving for authentic Nepali and Indian cuisine that he could no longer find close by. What started as a personal need quickly turned into a vision to serve his community. That vision became Palate Garden, a vibrant restaurant and full-service bar located in the heart of Saginaw.
Dipak, alongside his partners Ashwin Shrestha and Kshitiz Shrestha, founded Palate Garden to create a home for flavors rarely found in the local area. Offering traditional Nepali dishes and beloved Indian staples, the restaurant fills a unique gap in the community. “We wanted to bring food that connects people to home and introduces others to something new,” says Dipak.
The support was immediate and overwhelming. On opening day, the restaurant was packed beyond expectations, with lines out the door and the community excited to taste what had been missing. Even the mayor of Saginaw attended the ribbon-cutting, a gesture that solidified the restaurant’s place in the city.

Dipak didn’t come into this unprepared. With a background in business and IT, an MBA, and a doctorate in business research underway, Dipak fused his love for food with his entrepreneurial roots. “Business has always been my passion,” he shares. “Even as a child, I found ways to trade and sell goods.”
Growing up in a business-minded household in Nepal, Dipak developed a natural inclination toward leadership and community service. His past experiences in the food industry gave him the hands-on knowledge to launch Palate Garden successfully.
Palate Garden welcomes everyone. With a family-friendly atmosphere, a kids menu, and a bar area for adults, the restaurant serves all ages and walks of life. Whether you’re a local craving comfort food or someone new eager to explore cultural flavors, Palate Garden offers something for everyone.
“Texas was full of opportunity,” Dipak explains. “The people, the cost of living, the community support—everything aligned.” After moving, he realized just how underserved the market was for Nepali and Indian cuisine. Many people in the area were traveling up to an hour just to find something close to what they desired.
Recognizing this need, Dipak and his partners acted. Today, Palate Garden offers not only food but also a gathering place where people from all backgrounds can enjoy authentic meals without the long commute.
Outside of running Palate Garden, Dipak is involved in volunteer work and local events. He supports food banks, engages in local hackathons, and uses music and cultural events to stay connected to the community.

Though Palate Garden is still young, the growth is promising. “We haven’t spent a dollar on marketing,” says Dipak. “Everything has been word of mouth.” The results speak for themselves. Each week, new customers arrive—often referred by friends or family who can’t stop talking about the food.
Dipak, Ashwin, and Kshitiz continue to refine the menu, adding fusion twists and making the space welcoming for all. With plans to host small events and offer even more unique dishes, the team is excited for what’s ahead.
