“At Paulieboy Enterprises, we specialize in providing culinary delights for those seeking something different or custom-made dishes by a private chef,” explains Paul Cressend, the founder. With over 3 1/2 years in business, Cressend’s decision to embark on this culinary adventure was catalyzed by the challenges posed by the COVID-19 pandemic. “There weren’t many restaurants that could be open, so it served as a tipping point for me to become a full-time private chef and caterer,” he shares. His experiences working alongside various chefs in Charlotte, NC, and other areas further enriched his knowledge base, empowering him to start his own business.
As a one-man shop, Cressend occasionally enlists the help of sous chefs for larger events. However, his dedication to providing top-notch service remains unwavering. “My ratings are primarily five stars, garnered from Google reviews and feedback from patrons and event attendees,” he proudly states.
Beyond business, Cressend finds fulfillment in his personal journey of sobriety, which has brought clarity and perspective to his life. “Having clarity finally showed me that anything is attainable,” he reflects.
Despite his busy schedule, Cressend remains deeply engaged with Asheville’s vibrant food culture. “I love the growth and expansion of the city’s restaurants and its food culture,” he shares. When not in the kitchen, Cressend is committed to expanding his culinary knowledge and skills.
Reflecting on his unusual job experiences, Cressend fondly recalls his first private job—a six-day yoga glamping retreat. “It was unique having to prep in a strange kitchen in the middle of a barn with no air conditioning,” he chuckles.
