The name gives us the flexibility to be creative.”

Joey’s wife, Laurie, plays a key role, crafting dressings like blue cheese and ranch from scratch. “She’s my partner in crime,” Joey shared. “We’re like Frick and Frack in the truck, knowing exactly how to support each other under pressure.” Joey’s son also helps when he’s home from college, making it a full family effort.

Beyond serving food, the business gives back. “We donate a portion of sales to fundraisers and local organizations, from high school sports teams to animal shelters,” Joey said. The next dream? For Joey, it’s about freedom and creativity. “I couldn’t see myself in a 9-to-5 office job anymore,” Joey said. “I wanted to meet people, create something unique, and make others happy with great food.” At 55, Joey’s passion for life fuels his work, and his story is one of reinvention and joy.

One of Joey’s most significant memories involves his son. “I took him to his first concert at nine years old to see Extreme. That night shaped his love for music, and now he’s studying audio engineering.” Moments like these inspire Joey to share life’s beauty through food, music, and experiences.
