For the past three years, Federico Uliana and his team at Pasta Uliana “A Seriously Great Pastaficio” have been producing the finest quality fresh and dried pasta in Bath.

“What makes us different is that we are Italians who make authentic Artisan Pasta in the beautiful West Country. We found that our competitors are mostly based in large cities and produce pasta on an industrial scale, where quantity can sometimes compromise quality.

We only use premium, organic, and locally sourced ingredients, including eggs, durum wheat, and semolina. We are locally based and passionate about the quality of our traditional pasta. We are also proud to offer and happy to receive visits from our customers (covid restrictions permitting) at our laboratory, so they can and see how everything is made, nothing is hidden.

Federico is what we like to call a Local Biz Hero, a self-made entrepreneur who brings true value to his community. High standards of professionalism and the strong work ethics of small business owners like Federico are the foundation of the Bath economy.

Every pound that Pasta Uliana makes goes back to supporting the local business ecosystem and the community as Federico supports local charity Foodcycle and has donated 1500 portions of pasta to the charity.

We sat down with Federico for a quick interview –

Q: Why do you do what you do?

A: “My family has a strong culinary background, and I entered into the catering trade as a twenty old and had my own restaurant for 5 years. Seeking a change, I moved into the legal sector in London for several years, before realizing that I needed to get back to what I knew would make me genuinely happy, pursuing my family roots and the art of making fresh pasta.”

Q: How did you get into the business?

A: “Pasta Uliana began in 2017, started by myself and a fellow foodie friend, who had both upped sticks from Italy to London in our teens, with a strong culinary background in the family and a great passion for artisan produce. Through the years, we learned how to make delicious artisan fresh pasta and decided to leave our full-time careers to fully commit to our dream life. We began making and selling fresh pasta at artisanal food markets under the name The H’eggs Company.

 It was an instant hit, and customers lined up for portions of our bestselling Crab, Lime, and Mascarpone Tortelli and Bagfuls of Chickpea Caserecce. We quickly realized we needed room to grow and set up our first brick and mortar space in 2019 on the edge of Bath, two weeks before the first Covid 19 lockdown.”

 We are really excited as we emerge from the restrictions and getting lots of interest for our pasta classes, with bookings for May, already coming in.

Q: How many people work for you?

A: We have two part-time employees, Toby and Olivia. Toby and Olivia have been a pleasure to have on the team, they both have a great interest in artisan traditional pasta making and have been integral to our project. Olivia will be leaving us soon to join the Army, so would like to wish her the very best.

Q: What do you do to relax?

A: I love the slower pace of life in Bath, it really suits me, and I like to enjoy the fantastic parks and scenery around the city. I also love to go running, exercising in a local gym and traveling particularly to Asia, and of course, exploring different cultures and their food.

Q: If you could share one tip with the readers, what would it be?

A: “Focus on the quality of the raw ingredients and get the knowledge to go away and make your own 5-star dish.“
